One interview snippet that didn't make it past the final edit was Chef Milind's outlook on eating: "No cuisine is bad; all food is good!" He said this in regard to the various types of Indian food served across the nation, but it could apply planet-wide.
Another quote I liked: "Cuisine exists in people's hearts, minds, tastebuds..." This is so true, though I wish it wasn't also true that it seems to exist on my hips and waistline too. ;-)
